Crockpot Recipe

When my husband and I first got married, at my bridal shower everyone gave me a card with their favorite recipe on it. I use two of the cards all of the time...one of them being the phone number to the local Papa Johns Pizza shop! The other one was one for a "Crockpot Steak Diane". It is so simple and easy. A lot of crockpot recipes I have tend to be a lot of work or not very good. This one can be completed in under ten minutes in the morning and then it is ready for dinner whenever I am! This is an absolute favorite anytime I know I am going to be out in the afternoon or have a busy schedule. I hope you enjoy it as much as I do. (The card I got says it is from "Steamboat Entertains").

1 1/2 lbs. beef tenderloin or pot roast
2 cups thinly sliced mushrooms (I personally leave this one out, but if you like mushrooms add it!)
1 small white onion, sliced
3 cloves crushed garlic
1 tsp. lemon juice
3 Tbs. Worcestershire sauce
1/4 c. soy sauce
2 Tbsp. fresh parsley
Dash of oregano
1/2 - 3/4 C. Red wine or cooking sherry
3/4 lb. bag of small carrots
5 potatoes

Place meat in bottom of crockpot. Place remaining ingredients in a 2 c. measuring cup. Mix together and pour over meat. Place carrots on top of meat. Cut potatoes in half and place them on top of carrots.
Turn crockpot on high and cook for 5-6 hours. Or turn crockpot on low and cook for 10-12 hours. And enjoy when you are ready!
