Add a little variety to your lunch!

Recently my husband started his own business and since he's no longer working in an office with tons of people to eat lunch with, he's home everyday for lunch. The kids absollutely love seeing him everyday at lunch, but since I don't think he'd appreciate our typical peanut butter & jelly, or macaroni & cheese lunches, I've had to come up with new ideas! I hit a home run today with this simple, easy lunch from Publix Apron meals. It has quite a few ingredients, but I buy lunchmeat & cheese every week anything so the only thing I had to purchase for this was the salad dressing.


Turkey Apple Panini

Ingredients:
1 large tart apple (rinsed)
1/4 cup light mayonnaise
1/4 cup light Vidalia onion salad dressing
4 slices Bakery rustic sandwich bread
1/4 lb. thin sliced smoked honey turkey breast
4 slices smoked provolone cheese

Directions:
1. Peel & core apple; slice apple thinly
2. Combine in a small bowl, mayonnaise and salad dressing until blended
3. Spread mixture evenly on one side of all bread slices. Place 2 bread slices on work surface (coated side up); add 1/2 of the turkey to each, then 1/2 of the apple slices, and top with 1/2 of the cheese slices. Assemble sandwiches with remaining 2 bread slices.
4. Coat Grill with cooking spray. Place sandwiches on grill & press lid down firmly. Cook 5-6 min. occasionally pressing lid, until crisp and golden. Cut sandwiches in half using serrated knife.
5. Eat and Enjoy !!
